• Mama’s recipes: vegetable pizza

    My mom is a brilliant cook (and an even more exceptional pastry baker). I want to share some of her recipes on this blog (lots of luscious treats coming your way…). First, let’s begin with her vegetable pizza!

    Do not think that this is going to be another bland, healthier version of pizza. Believe me, it’s delicious. Try it for yourself, you’ll see!

    Dough

    • 180g flour
    • 3/4 teaspoon salt
    • 10g cube of baker’s yeast (or 1/2 sachet baker’s yeast)
    • 10cl tepid water
    • 1 tablespoon olive oil

    Toppings

    • 2 medium tomatoes
    • 1 small courgette/zucchini
    • 1 small aubergine/eggplant
    • 1 mozzarella ball (you can substitute it with goat cheese)
    • Optional: fresh basil leaves

    Seasoning

    • Salt
    • Black pepper
    • Red pepper
    • Garlic powder
    • Oregano
    • Olive oil
    • Pitted black olives

    Ingredients are for one medium round pizza.

    –> Mix the yeast in warm water.

    –>Whilst waiting for the yeast to dissolve, sift the flour and salt into a bowl.

    –> Make a well in the center of the flour/salt and add the dissolved yeast.

    –> Begin stirring with a spatula, then, knead the dough with your hands for around 10 minutes (adding the olive oil in the middle).

    –> Form the dough into a ball, lightly coat it with flour and knead again. Leave to rest in a hot place for 1h30 in a covered bowl (if possible, in the oven at 30°C/Th 1).

    –> Roll out the dough.

    –> Thinly slice the vegetables and place them over the dough.

    –> Add seasoning, olives and drizzle generously with olive oil.

    –> Place in oven at 210°C (Th 7) for around 20 minutes until vegetables are lightly browned.

    –> Finally, add the mozzarella slices on top of your pizza and put it back in the oven for a few minutes until the mozzarella has melted. If you want you can add fresh basil leaves.
